BBQ Pulled Jackfruit!

Whether you are vegan, veggie, trying to reduce your meat intake or a hardcore carnivore, Jackfruit is simply amazing! Now you can eat a scrumptious ‘meaty’ burger and it be one of your five a day!

What is Jackfruit? Jackfruit is a huge yellowy-green spikey fruit originating from India and Southeast Asia, which means you are unlikely to find a fresh one in the supermarket, or even the greengrocer! Despite being a sweet fruit, when Jackfruit is cooked and seasoned, it can take on a whole new life, with an uncanny resemblance to pulled pork.

I first came across Jackfruit in a café in England, and then again on my recent travels to Southeast Asia. The sandwiches that I had had Jackfruit in were incredible, and it made me sad that I couldn’t easily buy it, let alone cook it. When I got home from my travelling I regularly checked in every supermarket I went to, every health food shop, and every greengrocers, but with no luck. So you can only imagine my surprise when I went to explore a lovely new organic shop in Bristol (“Fox and West”), and I was greeted with a shelf packed with tinned Jackfruit (and it was only just over £3!).

I went and bought it, resisting the urge to take every tin, and went off on my day thinking of all the ways I could cook it, the recipes I could use and the yummy creations I could make. I settled on making BBQ pulled Jackfruit burgers, and they were AMAZING! They took about 45 minutes to make (but a lot of this was simmering), even leaving me time to catch up on Netflix.

When I first met my partner, he was the kind of boy who tended to eat meat in most meals, and whilst he eats less now, he is still impartial to a good meaty burger. Even he loved this meal, and what’s a bonus – it was so easy to make.

Here’s my recipe:

Ingredients Serves 2

1 tin of Jackfruit in water (salted water is fine)

1 tablespoon of soft brown sugar

1 teaspoon of paprika

1 clove of garlic finely chopped / half a teaspoon of garlic powder

¼ of a teaspoon of chili powder

½ cup of BBQ sauce

2 rolls of your choice (I used Brioche buns)

Any extra toppings

Salt and pepper to season

  1. Drain and rinse the jackfruit and pat dry

  2. Mix all of the dry ingredients with the jackfruit

  3. Add a little oil to a pan (I used a wok) and bring to medium heat add jackfruit for 3 minutes

  4. Add BBQ sauce with ½ a cup of water. Cover pan and reduce heat for 30 minutes, stirring occasionally

  5. Use masher to roughly break up pieces and assemble your roll

  6. Enjoy!

Whilst I used this to make rolls it would be delicious in salads, on pizzas, in Mexican dishes or to top your favourite veggie burger, but I think it would be great on anything!
