Meat Free Monday - Nachos

Serves 4

For the Chilli

1 red pepper thinly sliced

1 red onion thinly sliced

2 cloves of garlic thinly sliced

2 cups of frozen quorn mince

1/4 cup of peas

1/4 cup of sweetcorn

1 cup of passata

1 tbls of smoked paprika

1/2 tbls of balsamic syrup

2 tsp of chilli powder

2 tsp of maple syrup

1 avocado cubed

Sprinkle of cheese (optional)

For the nachos

4 tortillas sliced in eights

1 tbls of oil

1/4 tsp of garlic powder

1 tsp of smoked paprika

1 tsp of maple syrup

1) Preheat over to 180 degrees Celsius

1) Fry the onions until soft

2) Add the garlic and pepper for 4 minutes

3) Add all other ingredients and stir occasional for 10 minutes

4) Mix oil, syrup and spices

5) Place tortillas on 2 baking trays and sprinkle with nacho mixture

6) Bake for 5 minutes or until golden brown

7) Top tortillas with chilli

8) Finish with avocado and cheese and enjoy!
